Chewy Double Chocolate Cookies

1 ¼ cups butter or margarine
2 cups sugar
2 eggs
2 tsp. vanilla
2 cups flour
¾ cup cocoa
1 tsp. baking soda
½ tsp. salt
2 cups chocolate chips

Cream butter or margarine. Cream sugar. Add eggs and vanilla; beat well. Combine flour, cocoa, baking soda and salt. Blend in creamed mixture. Stir in chips by teaspoonfuls onto ungreased cookie sheet. Bake at 350F for 8 to 9 minutes. (Do not over bake; cookies will be soft.) They will puff while baking and flatten while cooling. Cool slightly; remove from cookie sheet. Makes approximately 4 ½ dozen.

Fudge

160 mL can evaporated milk
1 2/3 cups white sugar
½ tsp. salt
1 tsp. vanilla
½ cups nuts (optional)
1 ½ cups mini marshmallows
1 ½ cups chocolate chips

In a heavy saucepan, mix together evaporated milk, white sugar and salt. Over medium heat, heat mixture until it boils. Turn heat down and set timer for 5 minutes. Allow mixture to boil and stir constantly for 5 minutes. Remove from heat when timer goes off. Add marshmallows, chocolate chips, vanilla and nuts. Stir until everything is melted. Pour into a greased 8x8 inch pan and let cool. (Do not double this recipe)

Fudgey Fondue

2 cups chocolate chips
¾ cup milk
14 ox. can sweetened condensed milk
Assorted fondue dippers (cake pieces, marshmallows, cherries, grapes, mandarin orange segments, pineapple chunks, strawberries, fresh fruit slices)

In a heavy saucepan over low heat, combine chocolate chips, milk and sweetened condensed milk. Stir constantly until chocolate is melted and mixture is hot. Pour into fondue pot or chafing dish. Serve warm with assorted fondue dippers. Makes about 3 cups fondue.

Brownie Cake

1 cup butter
2 cups white sugar
4 eggs
1 ½ cups sifted flour
½ tsp. baking powder
¼ cup cocoa
Pinch of Salt
1 cup chopped walnuts
1 tsp. vanilla

Cream butter and sugar. Add well beaten eggs. Sift dry ingredients and blend entire mixture. Spread in a greased 9x13 inch pan. Bake at 350F for 25 to 30 minutes. Spread with your favourite chocolate icing.

Honey Swirl Brownies

3 eggs
3 oz. cream cheese, softened
¼ cup plus 2 tbsp. honey
¼ cup plus 2 tbsp flour
1 oz chocolate
¼ cup margarine
2/3 cup sugar
1 tsp. vanilla
½ tsp. baking powder
¼ tsp. cinnamon
¼ tsp. salt

Heat over to 350F. Grease 9 inch square baking pan. In a small bowl, beat cream cheese and 2 tbsp. honey with fork till smooth. Add 1 slightly beaten egg and 2 tbsp. flour, beating lightly until combined. In a small saucepan, melt chocolate and margarine over low heat. Set aside to cool completely. In medium bowl, combine chocolate mixture, sugar, remaining ¼ cup honey and 2 eggs. Stir in vanilla. Mix baking powder, cinnamon and salt with remaining ¼ cup flour. Stir in chocolate mixture just until combined. Spread ¼ of batter in pan, then pour cream cheese mixture on top. Drop spoonfuls of batter over cream cheese and cut through batter to make a swirl. Bake for about 25 minutes. Cool completely.

Chocolate Slice

1 ½ cups flour
¾ cup margarine
1 container Cool Whip
8 ox. pkg. cream cheese
1 cup icing sugar
3 cups milk
1 pkg. vanilla instant pudding mix
1 pkg. chocolate instant pudding mix
3 oz. chocolate

Bottom Layer: Cream margarine and stir in flour. Pack in to greased 9x12 inch cake pan. Bake for 10 minutes at 350F. Cool.

Second Layer: Beat cream cheese till smooth; add 2/3 cup Cool Whip and Icing sugar. Beat together. Spread over cooled bottom layer.

Third Layer: Beat together milk and both pudding mixes; let set. After it is set, spread over second layer. Cover with remaining Cool Whip and grate chocolate over top. Chill.

Chocolate Log Roll

5 eggs, separated
½ tsp. cream of tartar
1 cup sugar
¼ cup flour
3 tbsp. cocoa
1 tsp. vanilla
16 oz. whipping cream

Separate eggs. Beat eggs with cream of tartar until stiff. Gradually add ½ the sugar. IN another bowl, sift remaining sugar, cocoa and flour. After beating yolks until stiff, add them to flour mixture. (This is very stiff.) Add vanilla. Carefully fold yolk mixture into beaten whites. Line a cookie sheet with waxed paper. Grease and flour it as well. Spread batter evenly on pan. Bake at 325F for 20 minutes. Cool 5 minutes and turn onto towel sprinkled with icing sugar. Peel off waxed paper and roll cake with towel. Cool! Whip Cream and spread on unrolled cake. Roll again! Ice, if desired.

Chocolate Chip Cream Cheese Bars

18 ½ oz. pkg. cake mix
2 eggs, divided
1/3 cup vegetable oil
8 oz. pkg. cream cheese
1/3 cup white sugar
1 cup chocolate chips

Mix dry cake mix, 1 egg and vegetable oil until crumbly. Reserve 1 cup for topping; pat remaining crumb mixture into ungreased 9x13 inch baking pan. Bake for 15 minutes at 350?F. Beat cheese, sugar and 1 egg until light and smooth. Stir in chocolate chips. Spread over baked layer. Sprinkle with reserved crumb mixture. Bake for 15 minutes longer. Cool before cutting.

Chocolate Chip Cookies

1 cup brown sugar
½ cup white sugar
¾ cup soft margarine
2 eggs
1 tsp. baking soda
½ tsp. salt
1 tbsp. vanilla
1 ½ cup flour
1 cup rolled oats
1 pkg. chocolate chips

Mix ingredients in order. Bake at 350F for 7 to 9 minutes.
